200 g of Choy Sum
2 Cloves of Garlic, Crushed and roughly chopped
4 Cloves of Garlic, Minced
2 tablespoon of Oil
2 tablespoons of water
½ teaspoon of Salt

1. Prepare the Choy Sum:
Cut the Choy Sum in half, separating the leaves from the stems.
Blanch the stems of the Choy Sum for 2 minutes in Boiling Water.
The leaves do not need blanching, they will be cooked when fried. Blanching the leaves gives an overly wet and sloppy dish.
2. Prepare the Garlic:
Take the Garlic and crush and roughly dice 2 cloves, these will be fried with the Choy Sum.
Take the remaining 4 cloves of Garlic and dice them very finely, these will be used to produce the Garlic Sauce.
3. Fry the Choy Sum:
Add a half a tablespoon of Oil to a wok on a high heat.
Add the Crushed Garlic and the Choy Sum.
Fry for 2-3 mins.
Remove from the heat and put on a serving plate.
4. Make the Garlic Sauce:
Add the rest of the Oil to the wok on a high heat.
Add the Finely Diced Garlic.
Fry for 30 seconds to a minute. Do not burn the Garlic.
Add the Water and the Salt.
5. Finish and Serve:
Remove from heat and pour the Garlic Sauce over the Choy Sum.
