Ingredients
For the Potato and Pork:
- 700g Potatoes with Skin on (Any Variety)
- 6 Rashers of Thick Slice Bacon or a Gammon Steak
- 2 Cloves of Garlic
- 1 teaspoon Oil
For the Sauce:
- 1-2 Cubes of Fermented Red Bean Curd
- 1-2 tablespoons of the Red Bean Curd Sauce from the Tin
- 1 tablespoon Five-Spice Mix
- 500 mL Water
For the Garnish:
- 4 Spring Onions, sliced
- Salt (To Taste)

Instructions
1. Prepare the Potates and the Pork:
- Wash the Potatoes removing any dirt from the skins.
- With the skins still on, cut the Potatoes into 2 cm wide circles.
- Cut the Pork into strips.
- Crush and dice the Garlic Cloves.
2. Fry the Potatoes and Pork:
- In a large pan, add and heat the Oil.
- Add the Garlic, Potatoes, and Pork and fry on high heat for 3 minutes.
3. Add the Red Bean Curd:
- Put the kettle on for Boiling Water.
- While the kettle is boiling, add the 2 cubes of Red Bean Curd to the Potatoes and Pork and pour in some of the sauce from the Red Bean Curd Tin.
- Fry on high heat for 1-2 mins.
- Add the Boiling Water to the mixture. Although we say add 500 mL, it is dependent on the size of your pan. We do not want the water to cover the potatoes. We want the water to sit just below.
4. Cook the Dish Through:
- Add the Five-Spice Mix and stir well.
- Bring the mixture to the boil.
- When boiling place a lid on the pan and turn the heat down to a simmer.
- Allow the mixture to cook through for 20 minutes, stirring it every 5 minutes.
5. Garnish and Serve:
Remove from heat and add Salt to taste. Using Bacon and Gammon does make it salty, so you may not need it. My Agung always says, taste it, taste it, taste it. It’s essential to producing amazing Chinese food at home.
