Instructions

1. Toast the Sichuan Peppercorns:

  • In a small dry skillet, toast the Sichuan Peppercorns over medium heat for 2-3 minutes, stirring constantly, until fragrant. Remove from heat and grind them into a coarse powder using a mortar and pestle or spice grinder. Set aside.

2. Make the Sauce:

  • Heat 1 tablespoon of Vegetable Oil and 1 tablespoon of Chilli Oil in a large skillet or wok over medium heat.
  • Add the Ma Po Sauce (fermented broad bean paste) and sauté for 1 minute to release its flavors.
  • Stir in the Soy Sauce, and Stock. Simmer for 2-3 minutes, allowing the sauce to develop its deep, complex flavors.
  • Add the Corn Flour slurry to thicken the sauce, stirring continuously until it reaches the desired consistency. Set aside.

3. Cook the Pork (or Meat Substitute):

  • In the same Wok, heat 1 tablespoon of Vegetable Oil over medium-high heat. Add the Minced Pork (or alternative protein) and cook for 4-5 minutes, breaking it up with a spatula, until browned and cooked through.
  • Add the minced Garlic and Ginger, stir-frying for 1-2 minutes until fragrant.

4. Add the Tofu:

  • Gently stir the cubed Tofu into the skillet, being careful not to break the Tofu. Simmer for 2-3 minutes, allowing the Tofu to absorb the flavors.
  • Pour the prepared sauce over the Tofu and Pork, gently tossing everything together. Allow the dish to simmer for an additional 3-4 minutes, letting the sauce fully coat the Tofu.

Serving Suggestions

This Celestial Mapo Tofu pairs beautifully with Steamed Rice or Sticky Rice to soak up the rich sauce. For a complete meal, serve alongside sautéed greens like bok choy or Chinese broccoli. The bold, spicy flavors are perfectly balanced with the creamy texture of the tofu, creating a truly heavenly dining experience.

Pro Tips

  • Control the Heat: If you prefer a milder version, reduce the amount of ChilliOil or omit it altogether. For an extra spicy kick, increase the Chilli Oil or add a pinch of dried Chilli flakes.
  • Vegetarian Version: To make this dish vegetarian or vegan, simply omit the Minced Pork and substitute with mushrooms, plant-based meat, or omit the protein entirely for a lighter version.
  • Tofu Texture: Soft or medium Tofu works best for this dish, but if you prefer a firmer texture, use firm tofu and press it for 15-20 minutes to remove excess moisture before cooking.
